  • 3 pieces ripe bananas, mashed Use very ripe bananas for best flavor.
  • 1/3 cup melted butter
  • 1/2 cup brown sugar Packed brown sugar is preferred.
  • 1 large egg Can be substituted with applesauce for a vegan option.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 cup all-purpose flour Can be substituted with whole wheat flour.
  • 1/2 cup chopped nuts or chocolate chips Optional mix-ins.

Preparation

  • Preheat your air fryer to 320°F (160°C).
  • In a mixing bowl, combine the mashed bananas and melted butter. Stir until well combined.
  • Add the brown sugar, mixing until smooth. Incorporate the egg and vanilla extract, stirring continuously.
  • Sprinkle the baking soda and salt into the mixture, and combine thoroughly.
  • Gradually add the flour, mixing gently until just combined. If using nuts or chocolate chips, fold them in at this stage.

Cooking

  • Grease a small loaf pan that fits in your air fryer. Pour the banana bread batter into the pan, smoothing the top with a spatula.
  • Place the loaf pan into the air fryer basket and cook for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, remove the loaf pan from the air fryer and let it cool for a few minutes before transferring the banana bread to a wire rack.

Notes

For optimal flavor, use ripe bananas and avoid overmixing the batter. Experiment with mix-ins to customize your banana bread.
