Ingredients
  

For the falafel mixture

  • 1 can 15 ounces chickpeas, drained and rinsed
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon baking powder
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • 1/4 cup all-purpose flour (or chickpea flour for gluten-free)
  • as needed Cooking spray (optional)

Instructions
 

Preparation

  • Place the chickpeas into a food processor. Add the onion, garlic, parsley, cilantro, cumin, coriander, baking powder, olive oil, salt, and pepper. Grind the mixture until it forms a coarse, slightly chunky paste.
  • Transfer this mixture to a bowl and add the flour. Stir until fully combined.
  • Let the falafel mixture rest in the refrigerator for about 30 minutes.

Cooking

  • Preheat your air fryer to 375°F (190°C).
  • Scoop out small portions of the falafel mixture and roll them into balls or patties, about 1.5 inches in diameter.
  • If desired, lightly spray the air fryer basket with cooking spray. Place the falafel in the basket, ensuring they have space between them for even cooking.
  • Air fry for about 10-12 minutes or until golden brown and crisp, flipping halfway through the cooking time.

Notes

For extra crispy falafel, spray them lightly with oil before air frying. Consider adding spices like smoked paprika or cayenne for added flavor.
