  • 1 large egg
  • 2 tablespoons vegetable oil or melted butter
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your air fryer to 320°F (160°C) for about 5 minutes.
  • In a mixing bowl, combine the flour, sugar, baking powder, and salt. Mix these dry ingredients thoroughly.
  • In a separate bowl, whisk together the milk, egg, vegetable oil, and vanilla extract until well blended.
  • Pour the wet mixture into the dry ingredients. Stir gently until just combined; some lumps are okay, as overmixing can lead to tough pancakes.
  • Line the air fryer basket with parchment paper to prevent sticking.

Cooking

  • Cut the parchment into a circle that fits the basket.
  • Pour 1/4 cup of pancake batter onto the parchment paper for each pancake, ensuring they have enough space in between.
  • Cook for 6-8 minutes, or until the pancakes are golden brown and firm to the touch. Check doneness with a toothpick.
  • Carefully remove pancakes using a spatula and repeat with the remaining batter.

Notes

For toppings, consider maple syrup, fresh berries, nut butter, or whipped cream. Experiment with flavors by adding chocolate chips or fruit to the batter. Allow batter to rest for 5 minutes for fluffier pancakes. Avoid overcrowding the air fryer basket for even cooking.
