Ingredients
  

Main Ingredients

  • 1 can (14.75 ounces) salmon, drained and flaked
  • 1/2 cup breadcrumbs
  • 1/4 cup green onions, chopped
  • 1/4 cup bell pepper, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1 large egg
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • Olive oil spray or cooking spray for air fryer

Instructions
 

Preparation

  • In a large bowl, combine the flaked salmon, breadcrumbs, green onions, bell pepper, and parsley.
  • In a separate bowl, whisk together the egg, Dijon mustard, lemon juice, garlic powder, black pepper, and salt.
  • Pour the wet mixture into the salmon mixture and stir until everything is evenly combined.
  • Form the mixture into patties, about 2-3 inches in diameter. You should get around 8 patties.

Cooking

  • Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  • Lightly spray the air fryer basket with olive oil spray.
  • Place the patties in the basket in a single layer, making sure not to overcrowd them. You may need to cook in batches.
  • Lightly spray the tops of the patties with cooking spray to help them crisp up.
  • Cook for 10-12 minutes, flipping halfway through, until the patties are golden brown and cooked through.
  • Once done, remove patties from the air fryer and let them cool slightly before serving.

Notes

For thicker patties, reduce the amount of breadcrumbs. If using fresh salmon, ensure it's cooked and flaked before mixing. Let the mixture rest to enhance shaping. Preheating is important for crispiness.
