Ingredients
  

For the Chicken Marinade

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup buttermilk For marinating the chicken
  • 1 tablespoon hot sauce Adjust based on desired spiciness

For the Breading

  • 1 cup all-purpose flour For dredging the chicken
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper Adjust to taste

Instructions
 

Marinating the Chicken

  • In a bowl, combine buttermilk and hot sauce, mixing well.
  • Add the chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least one hour, ideally overnight.

Preparing the Breading

  • In another bowl, mix the flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper to create your breading mix.

Coating the Chicken

  • Remove the chicken from the marinade and let excess drip off.
  • Dredge each piece in the flour mixture, pressing down to ensure it adheres well.
  • For added texture, dip the flour-coated chicken back into the buttermilk before rolling it in breadcrumbs.

Cooking the Chicken

  • Preheat your air fryer to 390°F (200°C). Lightly spray the air fryer basket with cooking spray.
  • Place the breaded chicken breasts in the air fryer basket in a single layer, ensuring they do not touch. Spray the tops with cooking spray.
  • Cook for about 12-15 minutes, flipping halfway through, until the internal temperature reaches 165°F (75°C) and is golden brown.

Assembling the Sandwiches

  • While the chicken cooks, lightly toast your sandwich buns in a separate pan or in the air fryer for about 2 minutes.
  • Assemble the sandwiches by placing a crispy chicken breast on the bottom half of each bun, topped with lettuce, tomato, and a drizzle of spicy mayo.
  • Place the top half of the bun over the sandwich and press down gently. Serve immediately.

Notes

Consider using chicken thighs for a juicier sandwich or try different toppings and sauces to customize your sandwiches.
