  • 2 medium medium-sized squash (zucchini or yellow squash)
  • 2 tablespoons olive oil Can substitute with avocado, canola, or grapeseed oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes For added heat (optional)

Preparation

  • Wash the squash thoroughly under cold water and pat dry with a paper towel.
  • Cut the squash into even slices or rounds, about ¼ inch thick.
  • In a large mixing bowl, combine the olive oil, garlic powder, onion powder, dried oregano, salt, black pepper, and red pepper flakes (if using). Stir well until evenly mixed.
  • Add the sliced squash to the bowl and toss them in the spice mixture until completely coated.

Cooking

  • Preheat the air fryer to 400°F (200°C) for about 5 minutes.
  • Place the seasoned squash in the air fryer basket in a single layer, avoiding overcrowding.
  • Cook for 10-12 minutes, shaking the basket halfway through for even cooking.
  • Carefully remove the squash from the air fryer and transfer it to a serving platter.

Notes

For an elegant presentation, drizzle with balsamic glaze or sprinkle with grated Parmesan cheese. Enjoy as a snack, side dish, or in tacos with beans, avocado, and salsa. Adjust cooking time for desired crispiness.
