Ingredients
  

Stuffed Peppers

  • 4 pieces bell peppers (any color) Cut tops off and scoop out seeds.
  • 1 cup cooked rice or quinoa
  • 1 cup black beans (cooked or canned, rinsed)
  • 1 cup corn (frozen or canned, drained)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional) Reserve half for topping.
  • Fresh herbs for garnish (like cilantro or parsley) Optional.

Instructions
 

Preparation

  • Cut the tops off the bell peppers and scoop out the seeds and membranes.
  • In a large mixing bowl, combine cooked rice or quinoa, black beans, corn, diced tomatoes, chili powder, cumin, garlic powder, salt, and pepper. Mix well.
  • If using cheese, mix half of it into the filling and reserve the rest for topping.
  • Stuff each pepper with the filling mixture, pressing down gently.
  • Preheat your air fryer to 360°F (180°C).

Cooking

  • Place the stuffed peppers upright in the air fryer basket, fitting them snugly.
  • Cook for 15 minutes, then add the reserved cheese on top and cook for an additional 5 minutes until peppers are tender and cheese has melted.
  • Carefully remove the peppers from the air fryer and let cool slightly before serving.

Notes

Serve the stuffed peppers on a platter with fresh herbs on top. Pair with salad or crusty bread for a complete meal. Leftovers can be enjoyed warmed up or cold.
