  • 3.5 cups medium sweet potatoes, peeled and cubed About 2-3 sweet potatoes

Seasoning

  • 2 tablespoons extra virgin olive oil Or olive oil cooking spray
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Preparation

  • Wash and dry the sweet potatoes thoroughly, removing any dirt or debris.
  • Peel the sweet potatoes using a vegetable peeler.
  • Cut the peeled sweet potatoes into cubes ranging from 1/2 to 3/4 inch in size.
  • In a large mixing bowl, combine the sweet potato cubes with extra virgin olive oil, ensuring all cubes are thoroughly coated.
  • Add the seasoning mix of paprika, garlic powder, kosher salt, and black pepper to the bowl, and toss until evenly coated.

Cooking

  • Preheat your air fryer to 400°F (about 200°C).
  • Lightly spray the air fryer basket with cooking spray.
  • Place the seasoned sweet potatoes into the basket in a single layer, avoiding overcrowding.
  • Cook the sweet potatoes for 14 to 17 minutes, shaking the basket or flipping the cubes using tongs halfway through.
  • Remove the sweet potatoes from the air fryer and let them rest for 3 to 5 minutes before serving.

Notes

These air-fried sweet potato cubes can be stored in an airtight container in the fridge for up to 3-5 days and can also be frozen for longer storage.
