  • 1 cup almond butter Use natural almond butter for best flavor.
  • 1 cup brown sugar Can substitute with coconut sugar or maple syrup.
  • 1 large egg
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt Optional: add a pinch for taste enhancement.

Optional Ingredients

  • 1/2 cup chocolate chips Optional, can be omitted for a plain cookie.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the almond butter and brown sugar; mix until smooth and creamy.
  • Add the egg, baking soda, vanilla extract, and salt to the mixture and stir until well combined.
  • If using, fold in the chocolate chips.
  • Scoop tablespoon-sized portions onto the prepared baking sheet with enough space between each cookie.

Baking

  • Bake for 10-12 minutes, or until the edges are lightly browned. The centers may look soft.
  • Let the cookies sit on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

Serve warm with milk or coffee. For a festive touch, dust with powdered sugar or drizzle with melted chocolate before serving.
