Ingredients
  

For the Cookie Dough

  • 1 cup apple butter Can use store-bought or homemade
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, softened Should be slightly pliable, not melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can substitute with gluten-free flour for a gluten-free option
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until smooth and creamy.
  • Add the apple butter, egg, and vanilla extract. Mix until well combined.
  • In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.

Baking

  • Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes or until edges are golden brown. The centers may look slightly underbaked.
  • Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For best texture, ensure butter is at room temperature before using. Chilling the dough for 30 minutes can help retain shape while baking. Can be served with milk, ice cream, or used for cookie sandwiches.
