Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  • Add the Biscoff cookie spread, eggs, and vanilla extract, mixing until well combined.
  • In another bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Gently fold in the chocolate chips and crushed Biscoff cookies.

Baking

  • Using a cookie scoop or your hands, drop dough balls onto the prepared baking sheet, leaving space between each.
  • Bake for 10 to 12 minutes or until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes
