Dry Ingredients

  • 2 ½ cups Bisquick baking mix Measure accurately to avoid dense cookies.
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips Feel free to substitute with other types of chocolate.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the softened butter, granulated sugar, and brown sugar. Beat this mixture until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In a separate bowl, mix the Bisquick baking mix, baking soda, and salt together. Gradually add this to the wet ingredients, stirring until just combined.
  • Fold in the chocolate chips gently.

Baking

  • Using a tablespoon or cookie scoop, drop rounded dough balls onto the prepared baking sheet, spaced about 2 inches apart.
  • Bake for 10-12 minutes or until the edges are golden brown. The centers should remain slightly undercooked.
  • Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack.

Notes

For variations, consider adding nuts, coconut, or different types of chocolate. Ensure to cool the cookies completely before storing.
