  • 2 tablespoons paprika
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon cayenne pepper adjust for heat preference
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the Fish

  • 4 pieces orange roughy fillets pat dry before seasoning
  • 2 tablespoons olive oil for rubbing on fillets
  • 1 pieces lemon wedges for serving

Preparation

  • Mix paprika, onion powder, garlic powder, cayenne pepper, thyme, oregano, salt, and black pepper in a bowl to create blackening seasoning.
  • Pat the orange roughy fillets dry with a paper towel to remove excess moisture.
  • Rub each fillet with olive oil on both sides.
  • Generously coat each fillet with the blackening seasoning, ensuring an even layer on both sides.

Cooking

  • Heat a skillet over medium-high heat, preferably using a cast-iron pan.
  • Once the skillet is hot, place the seasoned fillets in the pan, avoiding overcrowding.
  • Cook for about 3 to 4 minutes on each side, or until fillets are charred and cooked through.
  • Remove the fillets from the skillet and serve immediately with lemon wedges.

Notes

For added flavor, marinate the seasoned fillets in the refrigerator for about 30 minutes before cooking. Fresh herbs can enhance the dish's aroma and visual appeal.
