Ingredients
  

Brownie Base

  • 1 box 9 oz fudge brownie mix
  • 1 large egg
  • 1 tbsp cold water

Caramel Layer

  • 14 oz unwrapped soft caramels
  • 1 can 5 oz evaporated milk

Cheesecake Layer

  • 16 oz cream cheese, at room temperature
  • ½ cup granulated sugar
  • 1 tsp pure vanilla extract
  • 2 large eggs

Topping

  • 1 cup chocolate fudge sauce to drizzle over cheesecake before serving

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the brownie mix, 1 egg, and cold water. Stir until well blended.
  • Grease a 9-inch springform pan and pour the brownie mixture into the bottom, pressing it down to create an even layer.
  • Bake for about 25 minutes or until set but still soft.

Caramel Layer

  • While your brownies are baking, melt the unwrapped caramels and evaporated milk in a saucepan over low heat, stirring continuously until smooth.
  • Once the brownies are out of the oven, pour the caramel evenly over the baked brownies and let cool for about 15 minutes.

Cheesecake Layer

  • In a clean mixing bowl, beat the cream cheese until fluffy and smooth.
  • Gradually add the granulated sugar and mix thoroughly. Then add the vanilla extract and 2 eggs, mixing until combined.
  • Spread the cheesecake mixture over the cooled caramel layer evenly.
  • Return the pan to the oven and bake for an additional 40 minutes, until the center barely jiggles.

Cooling and Serving

  • Let the cheesecake cool completely at room temperature before refrigerating. Ideally, chill for at least 4 hours, or overnight.
  • When ready to serve, warm the chocolate fudge sauce and drizzle over each slice.

Notes

For the best results, ensure cream cheese is at room temperature before mixing. If time is short, jarred caramel sauce can be used instead. Allowing the cheesecake to chill overnight helps flavors meld. Experiment with toppings for added personal touch.
