Main Ingredients

  • 1 pound chicken breasts, boneless and skinless
  • 1/2 cup buffalo sauce
  • 1 tablespoon olive oil
  • 1 cup cooked rice or quinoa Choose either rice or quinoa as the base.

Vegetable Ingredients

  • 1 cup romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup celery, chopped
  • 1/4 cup green onions, sliced

Cheese and Seasoning

  • 1/4 cup blue cheese or feta cheese, crumbled
  • to taste salt and pepper
  • optional avocado slices, extra buffalo sauce, or ranch dressing Add for extra flavor.

Instructions
 

Preparation

  • In a bowl, combine chicken breasts with olive oil, salt, and pepper.
  • Heat a skillet over medium heat and add the chicken. Cook for about 6-7 minutes on each side until the chicken reaches an internal temperature of 165°F (75°C).
  • Once cooked, remove the chicken from the skillet and let it rest for a few minutes before dicing it.

Assembly

  • Toss the diced chicken in buffalo sauce until well coated.
  • In serving bowls, layer the cooked rice or quinoa as your base.
  • Top it with chopped romaine lettuce, cherry tomatoes, diced cucumber, and chopped celery.
  • Add the buffalo chicken on top.
  • Sprinkle crumbled blue cheese or feta cheese and sliced green onions over everything.
  • Serve immediately and enjoy.

Notes

To enhance flavor, consider marinating the chicken in buffalo sauce for at least an hour. For more veggies, try adding roasted bell peppers, broccoli, or carrots. Adjust spice level by adding more or less buffalo sauce.
