Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-5 minutes.
  • Beat in the egg and vanilla extract until well combined.
  • In a separate bowl, combine the flour, baking soda, and salt. Gradually add this to the wet ingredients; mix until just combined.
  • Fold in the butterscotch chips and optional chopped nuts.

Baking

  • Drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each mound.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes
