  • 1 cup powdered sugar (for rolling)

Preparation

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large mixing bowl, combine the lemon cake mix, eggs, vegetable oil, lemon juice, and lemon zest. Mix until smooth until fully combined.
  • Let the dough rest for about 10 minutes.
  • Place powdered sugar in a shallow dish and portion the dough into small balls, rolling each in powdered sugar until fully coated.
  • Arrange the dough balls on prepared baking sheets, leaving about 2 inches of space between each cookie.

Baking

  • Bake for 9 to 11 minutes, until the edges begin to turn light golden and the centers appear soft.
  • Allow cookies to cool for 5 minutes on baking sheets before transferring to wire racks.
  • If desired, sprinkle additional lemon zest on top before serving.
