Ingredients
  

Crust

  • 1.5 cups graham cracker crumbs For the base of the cheesecake.
  • 0.5 cups unsalted butter, melted To bind the crust ingredients.

Cheesecake Filling

  • 1 cups sugar To sweeten the filling.
  • 1 teaspoon vanilla extract Adds flavor to the filling.
  • 1 teaspoon instant coffee granules Provides the cappuccino flavor.
  • 1 teaspoon cocoa powder Enhances the chocolate taste.
  • 32 ounces cream cheese, softened Main ingredient for cheesecake texture.
  • 4 large eggs For structure in the filling.
  • 0.5 cups sour cream Adds creaminess to the filling.

Fudge Topping

  • 8 ounces semi-sweet chocolate, chopped Main ingredient for the fudge topping.
  • 0.5 cups heavy cream Used to melt the chocolate into a smooth fudge.

Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C). Prepare a 9-inch springform pan by greasing it lightly.
  • In a bowl, mix the graham cracker crumbs and melted butter until combined. Press this mixture firmly into the bottom of the springform pan. Bake for 10 minutes, then let it cool.

Cheesecake Filling

  • In another bowl, beat the cream cheese until smooth. Gradually add the sugar while continuing to beat until creamy.
  • Mix in the vanilla extract, instant coffee granules, and cocoa powder until combined.
  • Add the eggs one at a time, mixing well after each addition. Finally, blend in the sour cream until smooth.
  • Pour the cream cheese filling over the cooled crust and smooth the top.

Baking

  • Bake for 55-60 minutes, or until the center is set but still slightly jiggly. Turn the oven off and let the cheesecake cool inside for an hour.
  • Remove the cheesecake from the oven and let it cool completely at room temperature. Once cooled, refrigerate for at least 4 hours, or overnight for best results.

Fudge Topping

  • To prepare the fudge topping, heat the heavy cream in a small saucepan until just boiling. Remove it from the heat and add the chopped chocolate, stirring until melted and smooth. Allow the fudge to cool slightly before spreading it over the cheesecake.
  • Chill the cheesecake again for at least 1 hour after adding the fudge topping.

Serving

  • Once set, carefully remove the cheesecake from the springform pan and slice it into wedges for serving.

Notes

For an extra indulgent experience, serve each slice with whipped cream and a sprinkle of cocoa powder or coffee grounds. Consider pairing with brewed coffee or espresso.
