  • 4 cups cooked rice
  • 2 cans (4 oz.) diced green chilies
  • 1 cup sour cream
  • 1 cup shredded Monterrey Jack or pepper jack cheese
  • 2 cups shredded cheddar cheese Divided
  • 1-2 tablespoons chopped fresh cilantro For garnish and flavor
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Dash cayenne pepper (optional) For added spiciness

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cooked rice, diced green chilies, sour cream, Monterrey Jack cheese, 1 cup of the cheddar cheese, chopped cilantro, salt, pepper, and cayenne pepper if desired.
  • Mix thoroughly to coat all the rice with the mixture.

Baking

  • Grease a 2-quart baking dish with cooking spray or olive oil and pour the rice mixture into the dish, spreading it evenly.
  • Cover the dish with aluminum foil and bake for 25-30 minutes.
  • Remove the foil, sprinkle the reserved 1 cup of cheddar cheese on top, and switch the oven setting to broil for about 2 minutes until the cheese is bubbly and golden.

Serving

  • Garnish with additional chopped cilantro and serve warm.

Notes

Use day-old rice for the best texture. Can be customized with additional ingredients like black beans or corn. Store leftovers in an airtight container for 3-5 days, or freeze for up to 3 months.
