Main Ingredients

  • 1 cup creamy peanut butter Can use natural or different flavored varieties.
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1 large egg Best at room temperature.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups all-purpose flour Use spoon-and-level method for measuring.
  • 1/2 cup chocolate chips Optional addition.

Preparation

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a large mixing bowl, combine the creamy peanut butter, brown sugar, and granulated sugar until smooth.
  • Add the egg and vanilla extract, mixing well until incorporated.
  • In a separate bowl, whisk together baking soda, salt, and flour. Gradually add this to the wet mixture, stirring until a dough forms.
  • If using, fold in the chocolate chips.

Baking

  • Scoop out tablespoon-sized portions of dough, roll them into balls, and place them on the prepared baking sheets, leaving space in between.
  • Flatten each ball slightly with the back of a fork to create a crisscross pattern.
  • Bake for 10 to 12 minutes, until the edges are lightly golden and the centers appear soft.
  • Allow to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

To enhance flavor and texture, chill the dough for at least 30 minutes before baking. Store cookies in an airtight container for up to a week, or freeze for longer storage.
