  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 onion (chopped)
  • 3 cloves garlic (minced)
  • 1 bell pepper (chopped)

Spices

  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • to taste Salt and pepper

  • cilantro fresh
  • lime for squeezing

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and bell pepper to the pot and sauté for about 5 minutes.
  • Stir in the minced garlic and cook for about 1 minute until fragrant.
  • Add the chili powder and cumin, cooking for 1-2 minutes.
  • Pour in the diced tomatoes and tomato sauce, then add the drained chickpeas.
  • Stir everything well and bring to a gentle simmer.
  • Let it cook for about 15-20 minutes, adjusting seasoning with salt and pepper.

Serving

  • Serve hot, garnishing with optional toppings like avocado, cilantro, or lime.

Notes

Customize spice levels by adding jalapeños or cayenne pepper. Let the chili rest for a while before serving for better flavor. It freezes well, making it a great meal prep option.
