Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, whisk together chickpea flour, baking soda, and salt.
  • In another bowl, combine maple syrup, almond butter, and vanilla extract, stirring until smooth.
  • Gradually fold the dry ingredients into the wet mixture until fully combined.
  • If using, mix in chocolate chips or dried fruits.

Baking

  • Scoop portions of dough onto a lined baking sheet, leaving space between each cookie.
  • Bake for 10 to 12 minutes until edges are golden brown.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a cooling rack.

Notes
