  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup creamy nut butter (like almond or peanut butter) Preferably smooth for easy mixing.
  • 1/4 cup honey or maple syrup Adjust to taste for sweetness.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup rolled oats
  • 1/2 cup chocolate chips (optional) For chocolate flavor.
  • 1/2 cup chopped nuts (optional) Good for added crunch.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a food processor, combine the drained chickpeas, nut butter, honey or maple syrup, vanilla extract, baking soda, and salt. Process until smooth and creamy, scraping down the sides as needed.
  • Add the rolled oats to the mixture and blend until combined, but still a bit chunky.
  • If using, fold in the chocolate chips and chopped nuts with a spatula until evenly distributed.
  • Using a tablespoon, scoop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Flatten each cookie slightly with the back of the spoon or your fingers for even baking.

Baking

  • Bake for 10-12 minutes, or until the edges are golden and the cookies appear set.
  • Allow the cookies to cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely.

Notes

Experiment with different spices such as cinnamon or nutmeg to enhance flavor. Store in an airtight container at room temperature for up to one week. For longer storage, refrigerate for up to two weeks or freeze for up to three months.
