  • 1 cup almond flour Can replace with coconut or whole wheat flour
  • 1 scoop vanilla protein powder Adjust based on the brand
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Wet Ingredients

  • ½ cup almond butter or peanut butter
  • ¼ cup honey or maple syrup Can use sugar-free sweeteners
  • 1 teaspoon vanilla extract

Add-ins

  • ½ cup dark chocolate chips You can substitute with white chocolate chips or dried fruits.
  • ¼ cup chopped nuts or seeds Optional for added crunch.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the rolled oats, almond flour, protein powder, baking soda, and salt.
  • In another bowl, mix the almond butter, honey (or maple syrup), and vanilla extract until smooth.
  • Combine the wet ingredients with the dry ingredients and stir until just mixed.
  • Fold in the dark chocolate chips and any optional nuts or seeds if using.

Baking

  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them a few inches apart.
  • Bake for 10 to 12 minutes or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for five minutes before transferring them to a wire rack to cool completely.
