For the Bars

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar, packed
  • 2 tablespoons ground cinnamon (for filling)

For the Glaze

  • 3 tablespoons confectioners' sugar
  • 1 tablespoon milk

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan or line it with parchment paper.
  • In a large mixing bowl, blend the flour, sugar, baking powder, salt, and ground cinnamon until well combined.
  • Pour in the melted butter, and then add the eggs and vanilla extract. Mix until fully incorporated and the batter is smooth.

Assembly

  • Pour half of the batter into the prepared baking pan, spreading it out evenly.
  • In a separate bowl, mix the brown sugar and ground cinnamon. Sprinkle this mixture over the batter in the pan.
  • Pour the remaining batter on top, ensuring it covers the cinnamon-sugar layer. Use a spatula to smooth it out.

Baking

  • Bake for 25 to 30 minutes, or until golden brown, and a toothpick inserted in the center comes out clean.
  • Allow the bars to cool completely before cutting into squares.

Glaze

  • For the glaze, whisk together the confectioners’ sugar and milk in a small bowl. Drizzle over the cooled bars before serving.

Notes

For serving, slice into squares and consider adding a dusting of confectioners' sugar or a light drizzle of glaze. Serving warm with a scoop of vanilla ice cream or whipped cream is a delicious option. To store, place in an airtight container at room temperature for up to three days, or refrigerate for up to a week. They can be frozen for up to three months.
