Ingredients
  

For the cookie dough

  • 1 cup butter, softened Make sure it's at room temperature.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract Add vanilla twice; once for dough and once for filling.
  • 2.5 cups all-purpose flour Sifted before measuring.
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 2 teaspoons ground cinnamon

For the cheesecake filling

  • 8 ounces cream cheese, softened Make sure it's at room temperature.
  • 0.5 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 0.25 cup brown sugar
  • 1 teaspoon ground cinnamon

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs and one teaspoon of vanilla extract, beating well to combine.
  • In another bowl, mix the flour, baking soda, salt, and ground cinnamon. Gradually add this dry mixture into the wet ingredients, stirring until just combined.
  • In a separate bowl, beat together the softened cream cheese, powdered sugar, and one teaspoon of vanilla extract until smooth and creamy. Set this mixture aside.

Assembly

  • Roll a tablespoon of dough into a ball, flatten it in your palm, and place about a teaspoon of the cream cheese mixture in the center.
  • Fold the dough around the filling and roll it back into a ball.
  • Repeat this for the remaining dough and filling, placing each cookie ball on the prepared baking sheet, spacing them about two inches apart.
  • In a small bowl, mix together the brown sugar and ground cinnamon. Sprinkle this mixture generously on top of each cookie ball.

Baking

  • Bake for 12-15 minutes or until the edges are golden but the centers are still soft.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Serve warm and lightly dust with powdered sugar for added sweetness. Pair with coffee or tea.
