  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Mix-ins

  • 2 cups sweetened shredded coconut Can toast for a more intense flavor
  • 1 cup semi-sweet chocolate chips Can substitute with dark or white chocolate

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until creamy.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet mixture until a dough forms.
  • Fold in the shredded coconut and chocolate chips until evenly distributed.
  • Drop rounded balls of dough onto the prepared baking sheets, leaving space for spreading.

Baking

  • Bake for 10 to 12 minutes, until edges are golden brown and centers look slightly underbaked.
  • Let cookies cool on baking sheets for about 5 minutes before transferring to wire racks to cool completely.

Notes

For serving, dust with powdered sugar, and pair with milk or tea. Store in an airtight container for up to one week or freeze for up to three months. For variations, add nuts or use different types of chocolate.
