Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 tablespoon instant coffee granules

Mix-Ins

  • 1 cup chocolate chips Semi-sweet or dark

Preparation

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.

Mixing Ingredients

  • In a large mixing bowl, combine the melted unsalted butter with granulated sugar and brown sugar until smooth and creamy.
  • Add the egg and instant coffee granules, mixing well until fully incorporated.
  • In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, ground cinnamon, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Gently fold in the chocolate chips.

Baking

  • Using a cookie scoop or tablespoon, drop the dough onto the prepared baking sheet, leaving space between each scoop.
  • Bake for 10 to 12 minutes, until the cookies are set yet soft in the center.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a chewy texture, do not overbake and consider mixing in nuts or using dark chocolate chips.
