Ingredients
  

For the Crust

  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted
  • 2 tablespoons sugar

For the Cheesecake Filling

  • 4 packages (8 ounces each) cream cheese, softened
  • 1.25 cups sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 cup fresh cranberries
  • 1 cup orange juice
  • 1 tablespoon orange zest
  • 0.5 cups chopped pecans or walnuts (optional) Can be used for added texture.

Preparation

  • Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  • In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix well until the crumbs are evenly coated.
  • Press the crumb mixture firmly into the bottom of the springform pan to form the crust. Bake for 10 minutes, then remove and let it cool.

Cheesecake Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth and fluffy.
  • Gradually add in the 1 ¼ cups of sugar and vanilla extract, mixing until well combined.
  • Add the eggs, one at a time, mixing on low speed after each addition until just blended.
  • Stir in the sour cream, orange juice, and orange zest until fully combined.
  • Pour the cheesecake filling over the cooled crust in the springform pan.

Cranberry Topping

  • In a small saucepan over medium heat, combine the fresh cranberries with a splash of water and cook until the cranberries begin to burst and soften, about 5-7 minutes.
  • Remove from heat and let them cool. Spread the cranberry mixture evenly over the cheesecake batter before baking.

Baking

  • Bake for 60-70 minutes or until the edges are set, and the center slightly jiggles.
  • Turn off the oven and let the cheesecake sit in the oven for 1 hour with the door slightly ajar.
  • Remove from the oven and chill in the refrigerator for at least four hours or overnight for best flavor.

Notes

For best results, use room temperature ingredients. Avoid opening the oven door during baking to prevent cracks. Store properly to maintain freshness.
