  • 1 cup cream cheese, softened Make sure it is at room temperature
  • 1.5 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon almond extract (optional) Enhances flavor
  • 2 large eggs

Dry Ingredients

  • 4 cups all-purpose flour Can substitute with gluten-free flour blends
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, beat the softened butter and cream cheese together until smooth and creamy using an electric mixer.
  • Gradually add the granulated sugar, mixing until the arrangement is light and fluffy.
  • Add in the vanilla and almond extracts, then mix one at a time to incorporate.
  • Add the eggs, one at a time, mixing well after each addition until fully combined.
  • In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until the dough is just combined. Avoid over-mixing.

Baking

  • Scoop tablespoons of cookie dough onto the prepared baking sheet, leaving space between each scoop to allow for spreading.
  • Bake for 10-12 minutes or until the edges turn slightly golden brown. The centers may still look soft; that’s okay as they will firm up while cooling.
  • Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For better texture, use room temperature ingredients and avoid over-mixing the dough. Can chill dough for thicker cookies.
