Ingredients
  

Chicken and Marinade

  • 1 pound chicken breast, cut into cubes
  • 2 tablespoons olive oil
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice

Vegetables

  • as needed Fresh vegetables (bell peppers, zucchini, or mushrooms) for skewering

  • as needed Wooden or metal skewers Soak wooden skewers in water for 30 minutes before cooking.

Preparation

  • Soak wooden skewers in water for about 30 minutes to prevent burning. Skip this step if using metal skewers.
  • In a bowl, combine olive oil, garlic powder, onion powder, paprika, salt, pepper, and lemon juice. Mix well.
  • Add cubed chicken to the marinade, ensuring pieces are well-coated. Refrigerate for at least 30 minutes, or up to 2 hours.
  • Prepare vegetables by cutting them into similar sizes as the chicken.

Cooking

  • Preheat air fryer to 375°F (190°C).
  • Thread marinated chicken and vegetables onto skewers, alternating between chicken and veggies.
  • Place skewers in air fryer basket, ensuring they are not crowded.
  • Cook for 12-15 minutes, flipping halfway through, until chicken reaches an internal temperature of 165°F (74°C) and is crispy.
  • Remove from air fryer and let rest for a few minutes before serving.

Notes

Serve with dipping sauces like garlic yogurt, sweet chili, or barbecue sauce. Pair with a side of salad or rice pilaf.
