  • 1/2 cup Ranch Dressing Homemade or high-quality store-bought.
  • 4 large Flour Tortillas Whole wheat or corn can be used.
  • 2 tablespoons Olive Oil or Butter Can be omitted.

Preparation

  • If using crispy chicken tenders, warm them in the oven or microwave until heated through. For a vegetarian option, cook crispy tofu or tempeh to desired crunchiness.
  • Slice the bell peppers and red onion into thin strips.
  • Heat a large skillet over medium heat, add olive oil or butter, and let it melt.
  • Add the sliced onions and bell peppers to the skillet and sauté for about 5-7 minutes until tender yet colorful.

Assembly

  • Lay out the tortillas on a flat surface.
  • Add a portion of crispy chicken (or vegetarian option), sautéed veggies, shredded cheese, and ranch dressing to the center of each tortilla.
  • Fold the sides of the tortilla in and roll tightly from the bottom to the top.

Cooking

  • Place the rolled burritos seam-side down in the skillet and toast for about 2-3 minutes on each side until golden brown.
  • Slice burritos down the middle and serve warm with additional ranch dressing, salad, salsa, or guacamole on the side.

Notes

Prep ingredients ahead of time for convenience. Avoid overstuffing burritos to ensure easy rolling. Store leftovers wrapped tightly in plastic wrap or foil, in an airtight container in the fridge for 2-3 days.
