Ingredients
  

For the Shrimp

  • 1 pound large shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 1 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup cold water

For the Orange Sauce

  • Zest of 1 orange
  • 1 cup fresh orange juice Use fresh juice for best flavor.
  • 1/2 cup sugar Adjust sweetness to taste.
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon ginger, minced
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch mixed with 2 tablespoons water For thickening the sauce.

For Garnish

  • Chopped green onions
  • Sesame seeds

Preparation

  • Start by preparing the shrimp. Rinse them under cold water, then pat them dry with paper towels. Place the shrimp in a bowl and set aside.
  • In a separate large bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Mix these dry ingredients well. Gradually add the cold water while whisking until you have a smooth batter.

Cooking

  • Heat oil in a deep skillet or pot over medium-high heat. The oil should be around 350°F (175°C) for frying.
  • Dip each shrimp into the batter, allowing any excess to drip off, then carefully place them into the hot oil. Fry the shrimp in batches to avoid overcrowding.
  • Cook the shrimp for about 2-3 minutes or until they turn golden brown and crispy. Use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain.

Prepare the Sauce

  • In another saucepan, combine the orange zest, orange juice, sugar, soy sauce, rice vinegar, ginger, and garlic over medium heat. Bring this mixture to a gentle simmer.
  • Stir in the cornstarch mixed with water to thicken the sauce. Continue to cook until it reaches your desired consistency.
  • Once done, add the crispy shrimp to the sauce and toss them gently to coat.

Serving

  • Serve immediately, garnished with chopped green onions and sesame seeds.

Notes

Ensure your oil is at the right temperature before frying. Use fresh ingredients for maximum flavor, and consider adding chili flakes for extra heat.
