Ingredients

  • 1 cup pitted dates, chopped
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Optional add-ins

  • 1 cup chopped nuts optional
  • 1/2 cup shredded coconut optional

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the chopped dates and optional nuts and shredded coconut.

Baking

  • Using a tablespoon or cookie scoop, drop rounded balls of dough onto the baking sheet, leaving space between each cookie.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For optimal freshness, store cookies in an airtight container. They will keep for a week at room temperature or can be frozen for up to three months.
