  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg Use room temperature.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional) Enhances cherry flavor.

Main Ingredients

  • 1 cup fresh or frozen cherries, pitted and chopped If frozen, thaw and drain excess moisture.
  • 1/2 cup chopped nuts (optional) Walnuts, pecans, or pistachios work well.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, whisk together the flour, baking soda, and salt.
  • In another bowl, beat the softened butter with granulated sugar and brown sugar until light and fluffy.
  • Add the egg and vanilla extract to the mixture, mixing well.
  • Gradually add the dry mixture to the wet ingredients, stirring until just combined.
  • Fold in the chopped cherries and nuts, ensuring they're evenly distributed.
  • Drop spoonfuls of dough onto the prepared baking sheet, spacing them apart.

Baking

  • Bake for 10-12 minutes, or until edges are lightly golden and centers are set.
  • Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container for up to 5 days at room temperature or freeze for longer storage. Layer with parchment paper if stacking.
