Easy Cornflake Cookies

- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract

- 3 cups cornflakes Lightly toasted for extra crunch (optional)

Instructions
Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the butter mixture, mixing until well combined.
- Carefully fold in the cornflakes, and if you're using them, add the chocolate chips and chopped nuts. Mix until everything is evenly distributed.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spaced a few inches apart.
Baking
- Bake in the preheated oven for about 10-12 minutes or until the edges are golden brown. The centers may look slightly underbaked, but they will set as the cookies cool.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
