  • 4 pieces Flour Tortillas (8-inch)
  • 1 pound Ground Beef (or chicken/tofu) Feel free to use any protein of your choice.
  • 1 cup Refried Beans Can use canned or homemade.
  • 1 cup Shredded Cheese (cheddar or Monterey Jack) Choose your preferred type of cheese.
  • 1 cup Salsa (store-bought or homemade)
  • 1 cup Fresh Bell Peppers, diced
  • 1 cup Fresh Onions, diced
  • ½ cup Fresh Jalapeños, diced Adjust amount for desired spice level.
  • Salt To taste.
  • Pepper To taste.
  • Garlic Powder To taste.
  • Cumin To taste.
  • Chili Powder To taste.

Cooking the Filling

  • Start by heating a skillet over medium heat. Add the ground beef (or your preferred protein), breaking it up as it cooks. You want to achieve a crumbly texture.
  • As the meat cooks, season it well with salt, pepper, garlic powder, cumin, and chili powder.
  • Look out for excess fat and drain it off to keep your burritos from being greasy.

Heating the Tortillas

  • Warm your flour tortillas by placing them in a dry pan over low heat or wrapping them in foil and placing them in the oven for a few minutes.

Layering Ingredients

  • Spread a generous layer of refried beans on the warm tortilla, followed by a scoop of your seasoned ground beef.
  • Sprinkle on some shredded cheese and add fresh diced bell peppers, onions, and jalapeños.

Rolling the Burritos

  • Carefully roll each tortilla by folding in the sides and then rolling from one end to the other, ensuring the fillings stay inside.
  • Place the burrito seam-side down on a baking sheet. Optionally, brush the tops with melted butter.

Baking the Burritos

  • Preheat your oven to 375°F (190°C).
  • Bake the burritos for about 15-20 minutes until they achieve a lovely golden brown crust.

Serving

  • Allow the burritos to cool slightly before slicing them in half to reveal the layers inside.
  • Serve with salsa, guacamole, or sour cream on the side.

Notes

You can prepare the filling in advance and store it in the refrigerator. For variations, try vegetarian burritos or burrito bowls. Don't overstuff the tortillas, and enjoy experimenting with different flavors and spices.
