  • 1 pound ground beef Can substitute with ground turkey or chicken.
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 12 pieces tortilla wraps (corn or flour)
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream For serving.
  • Fresh cilantro for garnish
  • Sliced jalapeños for garnish (optional)
  • Avocado slices for serving (optional)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, cook ground beef until browned, about 5-7 minutes.
  • Add chopped onion, bell pepper, and minced garlic. Sauté for 3-4 minutes until vegetables soften.
  • Stir in taco seasoning, black beans, corn, and diced tomatoes. Mix well and let simmer for about 5 minutes. Remove from heat.
  • In a 9x13-inch baking dish, spread a thin layer of the meat mixture. Place 3 tortilla wraps on top, followed by another layer of meat mixture and 1/3 of the shredded cheese.
  • Repeat the layering process until all ingredients are used, finishing with a layer of tortillas and topped with cheese.

Baking

  • Cover the baking dish with aluminum foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.

Serving

  • Let the lasagna cool for a few minutes. Cut into squares and serve topped with sour cream, fresh cilantro, jalapeños, and avocado slices.

Notes

For a spicier kick, use spicy taco seasoning or add crushed red pepper flakes. Experiment with cheese types; cheddar and Monterey Jack provide delightful creaminess. Incorporate fresh or sautéed veggies for added nutrition and flavor.
