Preparation

  • Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  • In a mixing bowl, combine the peanut butter, sugar, and a pinch of salt. Mix well until smooth.
  • Add the egg, baking soda, and vanilla extract to the bowl. Stir until all ingredients are well combined.
  • Fold in the chocolate chips until evenly distributed in the cookie dough.
  • Use a spoon to scoop out portions of the dough and roll them into balls, about 1 to 1.5 inches in diameter.
  • Place the dough balls onto the prepared baking sheet, spacing them about two inches apart.
  • Gently press each cookie ball down with a fork to create a crisscross pattern on top.

Baking

  • Bake in the preheated oven for 10 to 12 minutes, or until the edges are lightly golden.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

These cookies freeze well. For variations, consider adding nuts or oats, and experiment with different types of chocolate chips.
