  • 1 package red velvet cake mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup semi-sweet chocolate chips
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for dusting)

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the red velvet cake mix, oil, eggs, and vanilla extract. Mix until fully combined and smooth.
  • Fold in the semi-sweet chocolate chips until evenly distributed throughout the dough.

Baking

  • Scoop tablespoons of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about two inches apart.
  • Once all the dough is on the baking sheet, gently roll each ball in powdered sugar before baking.
  • Bake in the preheated oven for 10 to 12 minutes, or until the edges are set but the centers are still soft.
  • Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

For an even more delicious treat, serve warm with a scoop of vanilla ice cream or drizzle with cream cheese frosting. Store cookies in an airtight container for up to a week or freeze for longer storage.
