Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, whisk together the einkorn flour, baking soda, and salt until there are no lumps.
  • In another bowl, cream the softened butter with the brown sugar and granulated sugar until light and fluffy.
  • Beat in the vanilla extract and egg until well combined.
  • Gradually fold the dry ingredients into the wet mixture until just combined.
  • Gently fold in the dark chocolate chips.

Baking

  • Drop spoonfuls of dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
  • Bake for 10-12 minutes, until the edges are golden and the center is slightly underbaked.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For best results, measure flour accurately and consider chilling the dough if it's too sticky. You can also experiment with different types of chocolate chips.
