  • 1 cup salted butter, softened Use high-quality salted butter for best flavor.
  • ¾ cup granulated sugar
  • 2 ½ cups all-purpose flour Spoon into measuring cup and level off.
  • 1 teaspoon vanilla extract
  • 1 large egg yolk
  • 1 teaspoon coarse sea salt For sprinkling on top before baking.

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
  • Add the egg yolk and vanilla extract, mixing well until fully combined.
  • Gradually add in all-purpose flour until dough comes together. Do not overmix; it can be slightly crumbly.
  • Form the dough into a ball and wrap in plastic wrap. Chill in the refrigerator for at least 30 minutes.

Baking

  • Roll the chilled dough out on a lightly floured surface to about ¼ inch thick.
  • Use cookie cutters to shape the cookies as desired. Place spaced apart on the baking sheet.
  • Sprinkle a little coarse sea salt on top of each cookie.
  • Bake for 12-15 minutes or until edges turn lightly golden. Watch closely to avoid overbaking.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze in a single layer, separated by parchment paper, for up to three months.
