Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  • Add the egg and vanilla extract into the mixture and mix until well combined.
  • In a separate bowl, whisk together the gluten-free flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring gently to combine.
  • Fold in the chocolate chips until evenly dispersed.
  • Line a baking sheet with parchment paper.
  • Drop spoonfuls of dough onto the baking sheet, leaving space between each cookie.

Baking

  • Bake in the preheated oven for 10 to 12 minutes, or until the edges are golden brown and the centers remain soft.
  • Allow to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For chewier cookies, consider chilling the dough for 30 minutes before baking. You can customize by adding nuts or different types of chocolate.
