  • 1 lb ground beef
  • 2 large potatoes, diced
  • 1 large onion, chopped
  • 1 large bell pepper, chopped
  • 2 cloves garlic, minced

  • 2 tbsp olive oil

  • green onions Chopped, for garnish.
  • cheese Shredded, for garnish.
  • hot sauce For added spice.

Instructions
 

Preparation

  • Heat olive oil in a large skillet over medium heat until it shimmers.
  • Add chopped onion, bell pepper, and minced garlic. Sauté for about 5 minutes until they soften.

Cooking the Hash

  • Add the ground beef, breaking it up with a spatula. Cook until browned, about 6-8 minutes.
  • Mix in the diced potatoes and season with salt and pepper.
  • Stir occasionally and cook until the potatoes are tender, about 10-15 minutes. Add a splash of water or broth if the mixture gets too dry.

Serving

  • Serve hot from the skillet. Top with optional ingredients as desired.

Notes

For a peak flavor experience, try using russet or Yukon Gold potatoes. Stir occasionally to prevent sticking.
