Ingredients
  

For the Haystack Cookies

  • 2 cups butterscotch chips Use high-quality for best flavor.
  • 2 cups chocolate chips Dark, milk, or white chocolate can be used.
  • 3 cups chow mein noodles Provides the main crunch.
  • 1 cup peanuts Optional; can substitute with almonds or omit.
  • 1 cup mini marshmallows Optional; adds extra sweetness.

Preparation

  • Combine butterscotch chips and chocolate chips in a microwave-safe bowl.
  • Heat the mixture in the microwave in 30-second intervals, stirring thoroughly after each interval until smooth.
  • In a large mixing bowl, add chow mein noodles and, if desired, peanuts.
  • Pour the melted chocolate mixture over the chow mein noodles and gently fold to coat evenly.
  • If using mini marshmallows, gently fold them in last.
  • Prepare a baking sheet lined with parchment paper.
  • Drop spoonfuls of the mixture onto the prepared baking sheet, ensuring enough space between each cluster.
  • Allow cookies to cool at room temperature. Optionally, place in the fridge to speed up setting process.

Notes

Store cookies in an airtight container at room temperature for 5-7 days or refrigerate for longer freshness. For serving flair, drizzle melted chocolate on top or add chopped peanuts or shredded coconut.
