Ingredients
  

For the tzatziki sauce

  • 1 cup Greek yogurt Use high-quality, thick Greek yogurt.
  • 1 medium cucumber, finely diced
  • 1-2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dried dill (optional)

For the salad

  • 2 cups cooked chicken, diced or shredded Use lean chicken.
  • 1 medium tomato, chopped
  • 1/2 small red onion, finely chopped
  • 1/4 cup fresh parsley, chopped

Preparation

  • In a bowl, combine Greek yogurt, diced cucumber, garlic, lemon juice, salt, pepper, and dill if you're using it. Mix well until all ingredients blend together. Adjust seasoning to taste.
  • In a larger mixing bowl, add the diced or shredded cooked chicken, chopped tomato, chopped red onion, and parsley.
  • Pour the prepared tzatziki sauce over the chicken and vegetable mixture. Stir gently until everything is well-coated.
  • Once mixed, taste the salad and adjust salt and pepper if necessary.
  • Chill the salad for at least 30 minutes before serving to let the flavors meld together.

Notes

To elevate flavor, use high-quality Greek yogurt and let the salad rest in the fridge before serving. This salad can be served over greens or with whole grain pita or wraps.
