For the Chili Sauce

  • 2 tablespoons olive oil For sautéing the sauce ingredients.
  • 1/2 cup chili sauce Select a high-quality chili sauce for best results.
  • 1 teaspoon garlic powder Adds depth to the flavor.
  • 1 teaspoon onion powder Complementary flavor for the sauce.
  • to taste Salt and pepper Adjust to your preference.

Preparation of Noodles

  • In a mixing bowl, combine the flour and salt.
  • Make a well in the center and crack the large egg into it.
  • Gradually mix in water until a cohesive dough forms.
  • Knead the dough on a floured surface for about 5 to 7 minutes.
  • Let the dough rest for about 30 minutes to relax the gluten.

Cooking Noodles

  • Roll out the rested dough to your desired thickness.
  • Cut the dough into thin strips to form noodles.
  • Bring a large pot of salted water to a boil and cook the noodles for 3 to 5 minutes until al dente.
  • Drain the noodles and set aside.

Making Chili Sauce

  • In a skillet, heat olive oil over medium heat.
  • Add the chili sauce, garlic powder, onion powder, salt, and pepper.
  • Stir and let it simmer for a few minutes.
  • Toss cooked noodles gently in the chili sauce until evenly coated.

Serving

  • Plate the noodles in shallow bowls with chili sauce pooling around them.
  • Garnish with chopped green onions or fresh herbs like cilantro.
  • Optionally, sprinkle with toasted peanuts or sesame seeds.

Notes

For a richer flavor, consider adding a drizzle of sesame oil before tossing the noodles. Avoid overcrowding noodles while cooking to prevent sticking. Reserve some pasta water to adjust sauce consistency if needed.
