Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

Wet Ingredients

  • ½ cup unsalted butter, softened
  • ½ cup honey Warm slightly to mix easily.
  • 1 large egg
  • 1 teaspoon vanilla extract

Add-ins

  • 1 cup rolled oats
  • ½ cup chopped nuts (optional) Almonds, walnuts, or hazelnuts can be used.
  • ¼ cup sugar for rolling (optional) For added sweet crunch.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine flour, baking soda, cinnamon, and salt. Whisk until well blended.
  • In another bowl, beat the softened butter until creamy. Add honey and mix until well combined.
  • Add the egg and vanilla extract to the butter mixture and beat until smooth.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Fold in the rolled oats and chopped nuts if using. The mixture should be thick and somewhat sticky.

Baking

  • Use a tablespoon to scoop out portions of dough. Roll into balls and optionally roll in sugar.
  • Place on the lined baking sheet, spacing them 2 inches apart.
  • Bake for about 10-12 minutes, or until the edges are lightly golden.
  • Remove from oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For best results, chill dough for at least 30 minutes before baking. Experiment with different spices or add chocolate chips for variety.
