Ingredients
  

For the cookies

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup unsalted butter, softened Use room temperature butter for best results.
  • 3/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

For the icing

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract For additional flavor in the icing.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, mix together the oats, flour, baking soda, baking powder, salt, and cinnamon. Set aside.
  • In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy.
  • Add in the egg and vanilla extract, mixing until well combined.
  • Gradually incorporate the dry mixture into the wet ingredients, stirring until just combined; the dough will be thick.

Baking

  • Drop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
  • Remove from the oven and allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Icing

  • Once cooled, prepare the icing by whisking together the powdered sugar, milk, and vanilla extract until smooth.
  • Spread a layer of icing over each cooled cookie and let it set for a few minutes before serving.

Notes

For variations, consider adding nuts or dried fruit to the dough or experimenting with different icing flavors. Store cookies in an airtight container with parchment paper between layers to keep fresh.
