Ingredients
  

For the cookie base

  • 1 cup unsalted butter, softened Use real butter for best flavor.
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract Use high-quality extract.
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

For the filling and topping

  • 1/2 cup raspberry jam
  • 1/2 cup apricot jam
  • 1 cup dark chocolate, chopped
  • 1 tablespoon vegetable oil
  • to taste colored sprinkles Optional for decoration.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
  • Cream softened butter and granulated sugar together until light and fluffy in a large mixing bowl.
  • Add eggs one at a time, mixing thoroughly after each addition. Stir in vanilla extract and almond extract.
  • Gradually sift in flour and salt, mixing until just combined to avoid tough cookies.
  • Divide the dough into three bowls; color one red, one green, and leave one plain.

Baking

  • Spread red dough evenly in the prepared pan and bake for 10-12 minutes. Allow to cool.
  • Spread raspberry jam over the cooled red layer, then add the green dough on top. Bake for another 10-12 minutes and cool.
  • Spread apricot jam over the green layer, then top with the plain dough. Bake for an additional 10-12 minutes and cool completely.

Finishing Touch

  • Melt chocolate and vegetable oil together, then drizzle over the cooled layers.
  • Allow chocolate to set before cutting cookies into squares or rectangles, optionally adding colored sprinkles on top.

Notes

Allow layers to cool completely to keep distinct. Use sharp knife or warm knife for cleaner cuts. Store in airtight container with parchment paper. Chill for easier slicing.
